There’s something about a cheerful poke cake that brings a wave of joy during festive gatherings. I discovered this colorful dessert at a backyard barbecue, where its vibrant layers were as enticing as the laughter around the grill. The first bite was a burst of fruity flavor, and since then, it's been my go-to dessert for any patriotic celebration. Watching everyone dig in and enjoy it always fills me with happiness. Each slice truly feels like a little piece of festivity on a plate.

One summer afternoon, I decided to whip up this poke cake for a Fourth of July picnic. As I pulled it from the fridge, the sight of the layered colors reminded me of fireworks in the night sky. My family gathered around the table, and the cake quickly turned into the star of the show. Everyone had a favorite part, whether it was the cake, the sweet gelatin, or the rich ganache. It was one of those magical moments that reminded me of the simple joys shared over food.

In two bowls, dissolve each flavor of gelatin in 1 cup of boiling water, stir until fully dissolved, and mix in 1 cup of cold water for each.
Pour Gelatin:
Using a spoon or measuring cup, carefully pour the red and blue gelatin into alternate holes, creating a fun and festive pattern.
Prepare Ganache:
Combine chopped white chocolate and hot heavy cream in a bowl and let it sit for a couple of minutes before stirring until smooth.
Assemble:
Pour the ganache over the chilled cake, letting it spread evenly, then allow it to set for about 15–20 minutes.

Gelatin Filling

01 1 box (3 oz/85 g) strawberry or cherry flavored gelatin
02 1 box (3 oz/85 g) blue raspberry or berry blue flavored gelatin

Method

Phase 01

Prepare the Cake: Preheat oven to 350°F (175°C). Grease a 9x13 inch (23x33 cm) baking dish. Prepare the white cake mix according to package instructions. Pour batter into the prepared pan and bake as directed, usually 25–30 minutes. Allow cake to cool for 15 minutes.

Phase 02

Poke Holes: Using the handle of a wooden spoon, poke holes all over the cooled cake, spacing about 1 inch apart. Do not poke all the way to the bottom.

Assemble: Pour ganache evenly over chilled cake. Let sit for 15–20 minutes to set.

Phase 07

Decorate: Spread whipped cream over ganache and decorate with sprinkles or fresh berries.
